Bran Muffins


  • 5 teaspoons baking soda dissolved in 2 cups of water
  • 5 cups flour
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 cup butter
  • 4 beaten eggs
  • 1 quart buttermilk
  • 3 cups bran
  • 3 cups bran flakes
  1. Dissolve soda in hot water. In a large bowl, sift flour, sugar, and salt.
  2. Cut in butter until mixture resembles coarse crumbs. Mix in eggs and soda-water mixture all at once.
  3. Add buttermilk. Stir in bran. Mix until moistened.
  4. Refrigerate until ready to use. Keep up to 6 weeks.
  5. Grease muffin tins. Bake at 450 degrees for 10 mins.
