Gazpacho

Ingredients:

  • 2 cups chicken broth
  • 3 cups tomato juice
  • 1/2 cup olive oil
  • 1/6 cup red wine vinegar
  • 1/6 cup lemon juice
  • 1 cup cucumbers
  • 1 cup fresh tomatoes
  • 1/2 cup green peppers
  • 1/2 cup onion, diced
  • 1/2 cup celery
  • cilantro
  • 1/2 cup pimientos
  • croutons
  • parmesan cheese
  • ripe green olives

Direction:

  1. Combine all except the last three ingredients.  Process 1/2 of mixture in a blender.  Refrigerate.  Serve in bowls and may top with croutons, parmesan cheese and green olives.
