Gazpacho

Ingredients:

  • 4 cups chicken broth
  • 6 cups tomato juice, (spicy V-8)
  • 1/3 cup olive oil
  • 1/3 cup red wine vinegar
  • 1/3 cup lemon juice
  • 2 cups cucumbers
  • 2 cups fresh tomatoes
  • 1 cup green peppers
  • 1 cup onion, diced
  • 1 cup celery
  • cilantro
  • 1/2 cup pimientos (jalapeños, deseeded and chopped)
  • croutons
  • parmesan fishy crackers
  • parmesan cheese

Direction:

  1. Combine all except the last three ingredients.  Process 1/2 of mixture in a blender.  Refrigerate.  Serve in bowls and may top with croutons, crackers, or parmesan cheese.
