Orange Chicken

  • 2 lbs chicken breast, cut to bite size pieces
  • 1 cup flour
  • 1/2 teaspoon pepper
  • 2 teaspoons salt
  1. Combine flour, pepper, and salt.
  2. Dredge chicken pieces in flour mixture

Make batter.

  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 2 cups iced water
  1. Combine all ingredients in mixing bowl.
  2. Set your bowl onto another one with iced water on the bottom to keep batter cold.
  3. Heat oil on medium heat.
  4. Coat breaded chicken pieces with batter and fry in oil until golden brown.

Sauce

  • 2 garlic cloves, minced
  • 1 tablespoon oil
  • 1 cup water
  • 2 cups orange juice
  • 1 cup brown sugar
  • 1/2 cup ketchup
  • 2 chicken bouillon cubes
  • 1/4 teaspoon black pepper
  • 2 tablespoons corn starch
  • 3 tablespoons cold water
  • zest from one orange
  • 1-2 teaspoons red pepper flakes
  1. Sautee garlic in oil.  Be careful not to burn.
  2. Add water, orange juice, brown sugar, ketchup, chicken bouillon cubes, black pepper.  Simmer.
  3. Meanwhile, dissolve cornstarch in 3 tablespoons cold water.
  4. Slowly add to sauce, stirring constantly until thickened.
  5. Remove from fire and add orange zest.
  6. Add red pepper flakes if desired.
  7. Combine sauce and fried chicken pieces.  Toss to coat chicken.  Serve immediately.
