- 5 ounces cooked chicken breast, cut into 1/2″-3/4″ chunks
- 1/2 cup celery, chopped
- 3/4 cup apple, chopped
- 2 ounces walnuts, chopped
- 1 tablespoon raisins
- 1/3 cup prepared low- sugar Italian dressing
- Bibb lettuce
- In a medium bowl, gently stir together the chicken, celery, apple, walnuts, and raisins. Pour the dressing over the mixture and toss gently to coat.
- Serve on a bed of Bibb lettuce.
- Serves 2.
