Apple-Walnut Chicken Salad (South Beach)

Ingredients:

  • 5 ounces cooked chicken breast, cut into 1/2″-3/4″ chunks
  • 1/2 cup celery, chopped
  • 3/4 cup apple, chopped
  • 2 ounces walnuts, chopped
  • 1 tablespoon raisins
  • 1/3 cup prepared low- sugar Italian dressing
  • Bibb lettuce

Directions:

  • In a medium bowl, gently stir together the chicken, celery, apple, walnuts, and raisins.  Pour the dressing over the mixture and toss gently to coat.
  • Serve on a bed of Bibb lettuce.
  • Serves 2.
